Cottage Cheese pancakes


Ingredients:

  • 1 cup Oatmeal (old-fashioned)

  • 1 cup Cottage Cheese

  • 4 Egg

  • 2 tsps Vanilla Extract

  • 2 tsps Baking Powder

  • 1/2 tsp Cinnamon (ground)

  • 1/2 tsp Sea Salt

Steps:

  1. Add all ingredients to a high-powdered blender, blend until smooth.

  2. Heat large nonstick skillet or griddle over medium-low to medium heat. Spray or add a small amount of high-heat oil to pan or griddle.

  3. Pour 1/4 cup pancake batter onto skillet and cook until edges are set and bubbles begin to form (2-3 minutes). Flip pancake. Cook 2nd side for 1-2 minutes until golden brown.

  4. Serve warm pancakes with fresh berries and maple syrup.
