High Protein Cottage Cheese Pancakes
Pancakes without the post-breakfast brain fog
Ingredients:
1 cup Oatmeal (old-fashioned)
1 cup Cottage Cheese
4 Egg
2 tsps Vanilla Extract
2 tsps Baking Powder
1/2 tsp Cinnamon (ground)
1/2 tsp Sea Salt
Steps:
Add all ingredients to a high-powdered blender, blend until smooth.
Heat large nonstick skillet or griddle over medium-low to medium heat. Spray or add a small amount of high-heat oil to pan or griddle.
Pour 1/4 cup pancake batter onto skillet and cook until edges are set and bubbles begin to form (2-3 minutes). Flip pancake. Cook 2nd side for 1-2 minutes until golden brown.
Serve warm pancakes with fresh berries and maple syrup.
