Lemon Garlic Sheet Pan Chicken & Veggies
Quick Weeknight Menopause & Spring Allergy Friendly Dinner
Ingredients:
1/4 cup Extra Virgin Olive Oil
1 Lemon (medium, juiced)
2 tbsps Greek Seasoning
1 tsp Raw Honey
Sea Salt & Black Pepper (to taste)
2 Zucchini (medium, chopped)
4 Tomato (medium, sliced into wedges)
1 cup Red Onion (chopped)
3 Garlic (clove)
1 1/2 lbs Chicken Thighs (boneless, skinless)
Steps:
Preheat the oven to 425°F (220°C). In a small bowl, whisk together the oil, lemon juice, Greek seasoning, honey, salt, and pepper.
Add the zucchini, tomatoes, red onion, and garlic to a baking sheet and top with half of the marinade. Toss to coat.
In a bowl, coat the chicken in the remaining marinade. Arrange the chicken on the baking sheet and cook in the oven for 30 to 35 minutes or until the chicken is cooked through.
Divide the chicken and vegetables evenly onto plates. Drizzle with the remaining pan juices. Enjoy!
