Mom’s Peanut Butter Cookies, Upgraded

My mom’s peanut butter cookies without the sugar spike.

Low-Glycemic Peanut Butter Cookies


Ingredients:

  • 1/2 cup Organic Non-Hydrogentated Shortening (or unsalted butter)

  • 1/2 cup All Natural Peanut Butter

  • 1/2 cup Allulose (100% pure, no eurythritol )

  • 1/2 cup Coconut Sugar (brown)

  • 1 Egg

  • 1 1/4 cups Unbleached All Purpose Flour

  • 1/2 tsp Baking Powder

  • 3/4 tsp Baking Soda

  • 1/4 tsp Sea Salt

Steps:

  1. Preheat oven to 350.

  2. Mix together shortening (or butter), peanut butter, sugar alternatives, and egg.

  3. Add to mixture, flour, baking powder, baking soda, and salt.

  4. Chill dough. Roll into balls. Place on lightly greased baking sheet, lined with parchment paper. Gently flatten with a fork. Bake until set – not hard (about 10 minutes)
